Vanilla Bean Toffee Pecan Cookies

These vanilla bean toffee pecan cookies are buttery, chewy, cozy, and full of caramelized pecan crunch. They’re made with soft brown sugar cookie dough, homemade candied pecans, and creamy vanilla bean white chocolate bark folded throughout.

The pecans get cooked in butter and brown sugar until glossy, then baked until crisp and caramelized. Once they’re mixed into the dough with vanilla white chocolate, the cookies bake up golden, rich, and very bakery-style.

Ingredients

Cookie Dough

  • 113 g brown butter, cooled

  • 1 tsp honey

  • 140 g light brown sugar

  • 35 g granulated sugar

  • 1 large egg

  • ½ tbsp vanilla extract

  • 165 g all-purpose flour

  • ½ tsp baking soda

  • ½ tsp baking powder

  • ½ tsp kosher salt

  • 200 g vanilla bean white chocolate bark, chopped

  • 150–175 g candied pecans, chopped

Candied Pecans

  • 220 g pecans

  • 110 g light brown sugar

  • 85 g unsalted butter

  • Big pinch of kosher salt

Vanilla Bean White Chocolate Bark

  • 250 g white chocolate

  • Seeds from ½ vanilla bean

  • Pinch of salt, optional

Instructions

1. Make the Candied Pecans

  1. Preheat oven to 300°F and line a baking sheet with parchment paper.

  2. In a saucepan over medium-low heat, cook the brown sugar, butter, and salt until melted and combined. Try not to stir too much.

  3. Add the pecans and continue cooking until the coating thickens and the pecans look glossy. Stir mindfully and keep the heat on medium-low so the sugar doesn’t burn.

  4. Spread the coated pecans onto the lined baking sheet.

  5. Bake for 10–12 minutes, then let cool completely.

  6. Once cooled, chop into smaller pieces for the cookie dough. Save a few larger pieces for topping.

2. Make the Vanilla Bean White Chocolate Bark

  1. Melt the white chocolate until smooth.

  2. Stir in the vanilla bean seeds and salt, if using.

  3. Spread onto a parchment-lined baking sheet in a thin, even layer.

  4. Chill in the fridge until fully set.

  5. Chop into pieces and keep chilled until ready to use.

3. Make the Cookie Dough

  1. In a bowl, cream together the cooled brown butter, honey, brown sugar, and granulated sugar until combined and slightly lightened.

  2. Add the egg and vanilla. Whisk until smooth, glossy, and fully incorporated.

  3. Fold in the flour, baking soda, baking powder, and salt.

  4. When the cookie dough forms, fold in the chopped vanilla bean bark and chopped candied pecans.

  5. Scoop the cookies and chill in the fridge for a minimum of 2 hours, or up to overnight.

4. Bake

  1. Preheat oven to 350°F and line one or two baking sheets with parchment paper.

  2. Space the chilled cookie dough balls apart on the baking sheet.

  3. Bake for 14–16 minutes, until golden around the edges and still slightly soft in the center.

  4. Remove from the oven and scoot the cookies while warm, if needed.

  5. Top with extra candied pecans and vanilla bean bark while the cookies are still warm.

  6. Cool slightly and enjoy warm, or let cool fully for a chewier texture.

Notes

For the best flavor, chill the dough overnight. The brown butter deepens, the vanilla settles in, and the candied pecans stay crisp and caramelized throughout.

These are so good slightly warm when the white chocolate is soft, but they also get extra chewy once fully cooled. Store in an airtight container at room temperature.
