35 g cornstarch
½ tsp salt
720 g whole milk

230 g white chocolate, finely chopped
28 g unsalted butter
Red food coloring, as needed
Instructions
Make the Meringue Bones
Preheat the oven. Heat oven to 200°F (93°C). Line a large baking sheet with parchment paper.
Whip the egg whites. Add the egg whites and salt to the bowl of a stand mixer fitted with the whisk attachment. Whip until foamy.
Add the sugar gradually. With the mixer running, slowly add the granulated sugar a little at a time. Allow each addition to dissolve before adding more.
Whip to stiff peaks. Continue whipping until the meringue is thick, smooth and glossy and holds stiff peaks. Rub a small amount between your fingers; it should feel smooth rather than grainy.
Pipe the bones. Transfer the meringue to a piping bag fitted with a small round piping tip. Pipe straight bone shapes onto the prepared baking sheet, adding rounded knobs at both ends.
Bake. Bake for 2 hours without opening the oven.
Dry the meringues. Turn the oven off and leave the meringues inside for another 1 hour. Allow them to cool completely before removing them from the parchment.
Make the White Chocolate Pudding
Combine the dry ingredients. Add the sugar, cornstarch and salt to a medium saucepan. Whisk until evenly combined.
Add the dairy and eggs. Pour in the milk and egg yolks. Add the vanilla and whisk until smooth.
Cook the pudding. Place over medium heat and cook, whisking frequently, until the mixture begins to bubble and becomes thick and pudding-like, approximately 6–8 minutes.
Add the chocolate. As soon as the pudding thickens, remove it from the heat. Add the chopped white chocolate and butter.
Finish the pudding. Stir until the chocolate and butter are completely melted and the pudding is smooth.
Create the Halloween color. Add red food coloring gradually until you reach a deep blood-red shade.
Cool. Transfer the pudding to a bowl. Press plastic wrap directly against the surface to prevent a skin from forming and refrigerate until chilled.
Serve. Spoon the red white chocolate pudding into shallow bowls, cups or a serving dish. Arrange the meringue bones over the pudding just before serving.
Pro Tips for Perfect Meringue Bones
Use a completely grease-free bowl. Even a small amount of fat or egg yolk can prevent egg whites from whipping properly.
Add the sugar slowly. Rushing this step can leave you with grainy meringue or cause the bones to crack and weep.
Check that the sugar has dissolved. Rub a little meringue between two fingers. If you can still feel sugar crystals, continue whipping.
Keep the oven temperature low. Meringues need to dry rather than brown. A low oven keeps the bones pale and crisp.
Let them cool inside the oven. The gradual temperature change helps reduce cracking.
Add the bones at serving time. Moisture from pudding will eventually soften meringue, so keep the two components separate until you are ready to serve.
Variations
Strawberry Blood Pudding: Add a small amount of strained strawberry or raspberry purée to the finished pudding for a naturally fruity Halloween twist.
Black Cocoa Meringue Bones: For a darker dessert table, add a small amount of black cocoa powder to part of the meringue and create contrasting bones and decorations.
Vanilla Bean Pudding: Leave out the food coloring for an elegant white chocolate and vanilla dessert that works beyond Halloween.
Individual Halloween Dessert Cups: Divide the pudding between small glasses and top each serving with one or two miniature meringue bones.
Storage Instructions
Meringue bones: Store completely cooled meringues in an airtight container at room temperature for up to 5 days. Keep them away from humidity.
White chocolate pudding: Refrigerate in an airtight container for up to 3 days.
Note: For the crispest texture, store the meringue and pudding separately and assemble immediately before serving.
FAQ
Why are my meringues sticky? Humidity is usually the culprit. Meringue absorbs moisture easily. Make sure the bones are completely dried before storing them in an airtight container.
How do I keep meringue bones bright white? Bake them at a very low temperature and avoid increasing the oven heat to speed up baking. Higher temperatures can cause the sugar to caramelize and turn the meringue beige.
Can I make this Halloween dessert ahead of time? Yes. Make both components in advance and store them separately. The pudding can be refrigerated and the meringue bones kept airtight at room temperature. Assemble shortly before serving.
A Spooky Halloween Dessert Worth Making
These Halloween meringue bones with white chocolate pudding strike the perfect balance between whimsical and polished. The crisp white bones against the silky red pudding create an instantly recognizable Halloween dessert with plenty of visual impact.
Serve them individually, arrange them across a Halloween dessert table, or use the miniature bones as decorations for cakes, cupcakes and spooky treat boards.
