Ground Turkey Chili

  • 1 g olive oil

  • 227 g ground turkey

  • 50 g yellow onion, finely chopped

  • 120 g water

  • 120 g low-sodium chicken stock

  • 397 g crushed tomatoes

  • 8–16 g tomato paste, depending on desired thickness

  • 120 g kidney beans, drained and rinsed, optional

  • 5 g garlic, minced

  • 8 g chili powder

  • 1 g paprika

  • 1 g dried oregano

  • 1 g ground cayenne pepper, or less for mild chili

  • 1 g ground cumin

  • 3 g salt, plus more to taste

Instructions

Make the Skull Cornbread

  1. Prepare the oven and mold. Preheat the oven to 350°F. Grease 4–5 cavities of a skull baking mold thoroughly, including around the eyes, teeth, and edges.

  2. Combine the dry ingredients. Whisk together the flour, cornmeal, sugar, baking powder, and salt in a medium bowl.

  3. Combine the wet ingredients. In a separate bowl, whisk the beaten egg, melted butter, vegetable oil, and milk until smooth.

  4. Make the batter. Pour the wet mixture into the dry ingredients. Fold gently until no dry flour remains. Do not overmix.

  5. Fill the mold. Divide the batter between the prepared skull cavities, filling each approximately three-quarters full. Tap the mold firmly against the counter several times to release trapped air.

  6. Bake. Bake for 20–25 minutes, checking the cornbread early. Deeper skull molds may require up to 30 minutes.

Make the Ground Turkey Chili

  1. Brown the turkey. Heat the olive oil in a medium pot or Dutch oven over medium heat. Add the ground turkey and cook until browned, breaking it into small pieces as it cooks.

  2. Cook the onion and garlic. Add the chopped onion and cook for 3–4 minutes, until softened. Stir in the garlic and cook for another 30 seconds.

  3. Add the seasonings. Stir in the chili powder, paprika, oregano, cayenne pepper, cumin, salt, and black pepper. Cook for 30 seconds to release the spices’ aroma.

  4. Add the liquids. Pour in the water and chicken stock. Add the crushed tomatoes and tomato paste, stirring until smooth.
