Why You’ll Love This Recipe

  • Extra thick and bakery-style with soft, rich centers.

  • Packed with two kinds of chocolate chips.

  • Bright green dough and candy eyes make them instantly Halloween-ready.

  • Easy to customize with the original mint chocolate variation.

  • The dough can be chilled ahead for easier party prep.

  • Makes just 6 giant or 8 medium cookies, perfect when you want oversized statement cookies.

Ingredients

Monster Chocolate Chip Cookie Dough

  • 113 g unsalted butter, room temperature

  • 125 g light brown sugar

  • 125 g granulated sugar

  • 1 egg, room temperature

  • 2 tsp vanilla paste or extract

  • Green gel food coloring, as needed

  • 240 g all-purpose flour

  • 2 g baking powder

  • 3 g fine salt

  • 130 g semisweet chocolate chips

  • 170 g milk chocolate chips

  • 28 g chopped walnuts or pecans, optional

  • Edible candy eyes, as needed

Optional Mint Chocolate Variation

Instead of the semisweet chocolate chips, use:

  • 45 g mint chocolate chips

  • 85 g semisweet chocolate chips

Instructions

  1. Prepare the pan. Line a large baking sheet with parchment paper and set aside.

  2. Cream the butter and sugars. Add the softened butter, light brown sugar, and granulated sugar to a large mixing bowl. Beat with a hand mixer until light and fluffy.

  3. Add the wet ingredients. Add the egg, vanilla extract, and enough green gel food coloring to create a vivid monster-green dough. Mix until evenly combined.

  4. Add the dry ingredients. Gradually mix in the flour, baking powder, and salt just until a thick cookie dough forms.

  5. Add the chocolate. Fold in the semisweet chocolate chips and chopped pecans, if using. For the mint variation, fold in the mint and semisweet chocolate chips instead.

  6. Shape the giant cookies. Using a large ice cream or cookie scoop, portion the dough into 6 very large cookies or 8 medium cookies. For especially tall giant cookies, stack two scoops of dough on top of one another rather than flattening them.

  7. Add the milk chocolate chips. Press the milk chocolate chips generously over the outside of each dough ball.

  8. Chill. Refrigerate the shaped cookies for 30–60 minutes. During the final portion of chilling time, preheat the oven to 375°F (190°C).

  9. Bake. Bake for 20–25 minutes, or until the cookies are set around the edges and very lightly golden. The centers should still look soft.

  10. Finish the monster faces. Let the cookies cool on the baking sheet for about 5 minutes. While they are still slightly warm, gently press edible candy eyes into the tops.

Pro Tips

  • Do not skip the chilling time. These cookies are intentionally oversized, and chilling helps prevent excessive spreading while creating that thick bakery-style shape.

  • Keep the dough tall. Avoid flattening the cookie dough balls before baking. Taller portions create thicker centers.

  • Use gel food coloring. Gel produces a strong green color without adding excess liquid to the cookie dough.

  • Don't overmix the flour. Mix only until the dry ingredients disappear. Overmixing can make oversized cookies tougher instead of soft and tender.

  • Watch the centers, not just the color. Remove the cookies once the edges are set and lightly golden. The centers will continue cooking from residual heat as they cool.

  • Add the eyes after baking. Pressing the candy eyes into the warm cookies keeps their appearance cleaner and prevents unnecessary melting or discoloration.

Variations

  • Mint Monster Cookies: Use 43 g mint chocolate chips + 85 g semisweet chocolate chips in place of the 128 g semisweet chocolate chips. Keep the 170 g milk chocolate chips for decorating the exterior.

  • Extra-Googly Monster Cookies: Use different sizes of edible candy eyes across the tops for mismatched monster faces. This changes only the decoration, not the cookie dough itself.

  • Medium Monster Cookies: Divide the same dough into 8 portions instead of 6 for slightly smaller Halloween cookies. Begin checking them toward the earlier end of the baking window.

Storage Instructions

  • Store completely cooled monster cookies in an airtight container at room temperature for up to 3 days.

  • For longer storage, freeze the baked cookies in an airtight freezer-safe container for up to 2 months. Thaw at room temperature before serving.

  • The shaped cookie dough can also be refrigerated before baking. Keep it well covered so the surface does not dry out.

FAQ

  • Why do I need to chill giant chocolate chip cookies? Oversized cookie dough contains enough butter that it can spread significantly in the oven. Chilling firms the butter and gives these monster cookies a thicker, taller shape.

  • Can I make these without pecans? Yes. The pecans are optional and can simply be omitted without changing the rest of the recipe.

  • How do I know when giant cookies are finished baking? Look for lightly golden, set edges with centers that still appear slightly soft. Avoid baking until the entire cookie looks completely firm, or the centers can become dry as they cool.

Giant Halloween Cookies Worth Making

These Giant Monster Chocolate Chip Cookies combine thick bakery-style chocolate chip cookies with an easy Halloween makeover. The bright green color, piles of chocolate chips, and playful candy eyes make them a simple but eye-catching Halloween dessert for parties, treat tables, or spooky-season baking.

For the best texture, keep the dough portions tall, give them the full chilling time, and pull them from the oven while the centers are still soft.
