Brown Butter Chocolate Toffee Cookie Bars
These brown butter chocolate toffee cookie bars are thick, chewy, buttery, and packed with chopped chocolate and crunchy homemade toffee. They have that deep brown butter flavor, a soft cookie center, crisp golden edges, and little pockets of melty chocolate throughout.
They’re everything I want in a cookie bar: low effort, bakery-style, and so satisfying once chilled and sliced. The coffee extract is optional, but it makes the chocolate taste deeper without making the bars taste like coffee.
INGREDIENTS
Brown Butter Cookie Bars
260 g unsalted butter, weighed before browning
1 tsp honey
280 g light brown sugar
75 g granulated sugar
2 large eggs
1 tbsp vanilla extract
½ tbsp coffee extract, optional
330 g cake flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
250 g chopped chocolate
110 g homemade toffee, chopped
115 g extra chocolate, for topping, optional
Flaky salt, for topping
Homemade Toffee
113 g unsalted butter
90 g granulated sugar
½ tsp salt
Graham crackers, optional, for a graham toffee layer
INSTRUCTIONS
Make the Toffee
Line a small square pan or baking sheet with parchment paper. If using graham crackers, arrange them in a single layer on the parchment.
In a medium saucepan, combine the butter, sugar, and salt.
Place over medium heat and stir until the butter melts and the mixture comes together.
Let the mixture simmer and caramelize, stirring every 30–45 seconds so it cooks evenly. Try not to over-stir.
Once the toffee reaches a rich caramel color and looks smooth, pour it onto the prepared parchment or over the graham crackers.
Spread evenly with a spatula and let cool completely.
Once set, break into pieces and use in the cookie bars.
Make the Cookie Bars
Preheat oven to 350°F and line an 8x8-inch square pan with parchment paper.
Brown the butter, then let it cool slightly. It should be warm but not hot when you use it.
In a large bowl, combine the slightly cooled brown butter, honey, light brown sugar, and granulated sugar. Whisk until smooth and glossy.
Add the eggs, vanilla extract, and coffee extract, if using. Whisk until the mixture is slightly lightened and fully combined.
In a separate bowl, whisk together the cake flour, baking soda, baking powder, and salt.
Fold the dry ingredients into the butter mixture until a thick cookie dough forms.
Fold in the chopped chocolate and chopped toffee.
Press the dough evenly into the prepared pan.
Top with extra chocolate, if using, and a sprinkle of flaky salt.
Bake for 35–42 minutes, or until the edges are golden and the center is set but still soft. Start checking around 35 minutes.
Let cool completely in the pan.
For the cleanest slices, chill until firm before cutting into bars.
NOTES
These bars are best once they’ve had time to cool and set. The texture turns dense, chewy, and buttery, with crunchy bits of toffee and melty chocolate throughout.
Store in an airtight container at room temperature, or chill them if you like a firmer, fudgier cookie bar.
